THE August It’s blackberry season: plump, sweet and aromatic like never before this year. But unfortunately the happiness of the berries only lasts a few weeks. If you don’t take precautions now, you’ll miss out on all the flavor of summer. Luckily, there are two quick methods you can use to preserve blackberries without too much effort and without losing the flavor. This means you can enjoy berries in the dead of winter as if they were freshly picked.
Freezing blackberries
Freezing blackberries is one of the simplest and most effective ways to extend their shelf life without compromising their flavor or nutrients. Just follow these steps:
- Rinse te blackberries thoroughly in a colander and let them dry well.
- Place the dried berries on a tray or large plate so they are not touching each other and freeze them overnight.
- You can then transfer the frozen blackberries to resealable freezer bags and label them to make them easier to find later.
Preserving wild herbs in August
Now in August and at the end of summer it is important to think about winter and work the wild plants which are particularly abundant at this time. You can currently dry many plants, seal them tightly, and store them in a dark, cool place until you need them for home remedies in the fall or winter. You can find an overview of how to best preserve wild herbs in our book “Preserving wild herbs“(available here), available in our shop www.die-moderne-Kräuterhexe.de from.
Delicious blackberry jam
Blackberry jam is not only a delicious addition to breakfast, but it’s also a great way to preserve blackberries long-term. Here is a simple recipe:
- Wash 500 g of fresh blackberries well and mix them in a saucepan with 250 g of preservative sugar. You can optionally make the recipe with xylitol (200 g) or alternatively erythritol (150 g). These are alternatives to sugar. Keep in mind, however, that the shelf life is not as good as that of classic sugar. In the same way you can prepare a jam with an alternative to sugar. However, it should be used quickly or frozen.
- Bring the mixture to the boil, stirring constantly, and simmer for about 5-7 minutes until the jam has reached the desired consistency.
- Pour the still hot jam into the sterilized jars and close them immediately. Turn the jars upside down for a few minutes to seal them airtight.
