Recipe for a classic nettle bread
To prepare the bread you must first collect a bowl of nettle leaves and seeds and wash them carefully. If you don’t have fresh seeds available, you can leave them out and simply cook bread with nettle leaves. You can then sprinkle other seeds or dried ones over the bread Nettle seeds Take.
Let’s start with the recipe for classic nettle bread with spelled flour. For this it is necessary:
- 300 g of spelled flour
- 20 g yeast (also dry yeast)
- 1 liter of honico
- 1 teaspoon of salt
- 1 teaspoon softened butter
- 125 ml of warm water
- 1 onion
- approximately 30 – 50 g fresh Nettle leaves

Preparation of bread
First mix the flour with the yeast, honey, salt and water and knead well. Then let the dough rise for 15 minutes. Next is soft butter: knead it under the dough. Cut the onion and nettle leaves into small pieces and let them sweat together briefly. Then you also knead them into the dough. The bread is then baked in a preheated oven at around 220° C for 20 – 30 minutes
Recipe for gluten-free nettle bread
With this recipe you can bake gluten-free nettle bread. For the bread you will need:
- 500 g of oat flour (gluten-free) or alternatively buckwheat flour
- 1 tablespoon cumin
- 20 g yeast (fresh)
- 1 tablespoon honey or erythrol/xylitol
- 2 teaspoons of apple cider vinegar
- 450 ml of warm water
- 1-2 teaspoons of salt
- 50 g nettle leaves (fresh)
- 30 g nettle seeds (fresh or dried)

Place the flour, salt and cumin seeds in a bowl. The yeast is then crumbled and mixed with honey, vinegar and water. The best way to knead bread is with a mixer equipped with a hook or with a food processor. When the mixture has slowly come together into a homogeneous mass, add the whole nettle leaves and about half of the nettle seeds. It doesn’t matter if they are still a little wet from the wash. The dough is then kneaded again so that the nettles mix into the dough. Now let the dough rise for two hours in a warm place, covered with a cloth
Bake nettle bread
The bread can be baked in a pan or formed into a loaf on a baking sheet. Before baking, sprinkle the bread with the remaining nettle seeds and press them in lightly. It is cooked at 210°C for about 50 minutes on the central grill. You can put a fireproof bowl with water in the oven at the bottom, then the bread will be juicier.
