Why is rhubarb healthy?
Rhubarb is a delicious and healthy plant that contains a variety of nutrients. Here are some of the key nutrients contained in 100 grams of rhubarb:
- Fiber: 1.8 gams
- Vitamin C: 8.0 milligrams
- Potassium: 288 milligrams
- Calcium: 86 milligrams
- Magnesium: 12 milligrams
- Iron: 0.2 milligrams
The edible stems are also rich in antioxidants and can aid the body’s digestion and detoxification. It’s also important to note that rhubarb has high levels of oxalic acid, which when consumed in excess can lead to health problems such as kidney stones or calcium deficiency. For this reason, rhubarb should be enjoyed in moderation and not consumed in large quantities. Combining rhubarb with products such as quark or soy quark makes a lot of sense, as it contains a relatively high amount of calcium. Cooking also ensures that the oxalic acid is partially broken down during cooking, but not completely. The exact amount to break down depends on the temperature and cooking time, but also on the type of rhubarb. A guideline may be that the oxalic acid content in rhubarb can be reduced by up to 30%-50% during cooking.

Rhubarb pie recipe
The recipe can also be modified. We will write alternatives for you.
For the floor:
- 150 g buckwheat or buckwheat flour
- 100 g of gluten-free oat flakes
- 150g vegetable fat or butter
- 5-6 soft dates
- ½ litre Cinnamon
- ½ teaspoon baking powder
For coverage of the rhubarb pie:
- 500g soy quark or low-fat quark
- 300g soya yoghurt or yoghurt
- 150 g Erythrite or sugar
- 7-8 stalks of rhubarb
- 1 tonka bean or the pulp of a vanilla pod
- 1.5 packets of pudding powder
- 30g of almond flakes for decoration

Making gluten-free rhubarb cheesecake
For the base, buckwheat is first ground or you can buy buckwheat flour immediately. I do it in the Thermomix jug. But you can also use a high-performance chopper or blender. Then the dates should be chopped. In the Thermomix I simply add them to the flour and chop everything again for 10 seconds at level 10. Then I add the oat flakes, fat, cinnamon and baking powder. Everything is mixed until a smooth dough is obtained. If there is no liquid you can also add a few tablespoons of vegetable milk. When it comes to gluten-free recipes, you always have to experiment a little. Then check whether the consistency is sufficient to press the rhubarb pie dough into a greased springform pan. It is best to do this with a spoon that you can moisten slightly with water so that the dough does not stick to the spoon. But you can also do it with your hands.
Healthy living with wild herbs and medicinal plants

The rhubarb stalks are then peeled and washed. Choose the prettiest ones that contain more red and cut 5 sticks that you can place in the center of the rhubarb pie. Cut the rest into pieces about 1-2 cm thick, which will create a rhubarb garland on the edge.

Now mix everything Military Quark and yogurt with Erythritethe grated Tonka bean and the pudding powder in a bowl. Then put it on the cake base and garnish the cheesecake with rhubarb, for example, as I did in the photo. The mass is so solid that the poles do not sink. Now you can decorate it with flaked almonds.
